Blueberry Breakfast Rolls

1 tube refrigerated cinnamon rolls

1 cup blueberries

½ tsp. lemon zest

1/4 cup blueberry jelly

1/3 cup chopped pecans

Cut a refrigerated cinnamon roll in half; press halves into a muffin cups. Add berries, lemon zest, jelly and pecans equally on top of roll halves. Bake at 375 degrees for 12 minutes. Drizzle icing over all.

Creamy Blueberry Salad

1- 6 oz package raspberry flavored gelatin

2 cups boiling water

1 ½ cups cold water and ice

2 cups blueberries

1- 8 oz. can crushed pineapple

1- 8 oz. package cream cheese, softened

1- 8 oz. carton light dairy sour cream

½ cup sugar

1 tsp. vanilla

½ cup coarsely chopped pecans

In a bowl, mix gelatin and boiling water until combined. Add ice water, stirring until ice melts. Stir in berries and undrained pineapple. (If you use frozen blueberries no need to use ice.) Transfer to a 9"x 13" baking dish. Cover and chill until set.

In a separate bowl, combine cream cheese, sour cream, sugar and vanilla. Spread over gelatin mixture. Sprinkle with nuts. Cover and chill up to 12 hrs. Makes 12 servings.

Lemon - Blueberry Pie

(from Better Homes and Gardens prize tested recipes)

1 cup sugar

3 Tbl. cornstarch

1 cup milk

3 beaten egg yolks

1/4 cup butter

1 Tbl. lemon zest

1/4 cup lemon juice

1 - 8 oz carton light dairy sour cream

2 cups fresh blueberries

1 - 9 inch baked pastry shell

In a saucepan, combine sugar and cornstarch. Add milk, egg yolks, butter and zest. Cook and stir over medium heat until thickened. Cook and stir 2 min. more. Remove from heat, stir in lemon juice. Transfer to a bowl and cover surface with plastic wrap. Refrigerate. When cool, stir in sour cream and blueberries. Pour in pastry shell cover, and chill at least 4 hrs. If desired, top with whipped cream.
