Blueberry-Almond Streusel Muffins

(note: these are tender low-fat muffins which freeze well. The key ingredient is ricotta cheese.)

BLEND IN LARGE BOWL:

2 C. white flour

½ C. whole wheat flour

1 C. sugar

1 Tbl. baking powder

1 tsp. baking soda

½ tsp. salt

1 C. blueberries

IN A BLENDER, MIX COMPLETELY:

1/3 C. light ricotta cheese

3/4C. low-fat milk

1/2 C. buttermilk

2 Tbl. canola oil

1 Tbl. vanilla extract

1 tsp. almond extract

2 eggs

Pour the blender contents into the dry mixture and stir until just combined. Place in prepared muffin cups and sprinkle tops with topping.

TOPPING:

¼ C. flour

½ C. finely chopped almonds

1 Tbl. Brown sugar

1 Tbl. melted margarine

Bake in preheated 400 degree oven for approx. 18 min. or until done. Makes 18 muffins.

Very Berry Triple Fruit Pie

FILLING:

1¼ C. raspberries

1¼ C. blueberries

1¼ C. strawberries

½ tsp. almond extract

1¼ C. sugar

¼ C. quick-cooking tapioca

¼ tsp. salt

¼ tsp. ground nutmeg

1 Tbl. lemon juice

In large bowl, combine fruit and mix with almond extract. In separate bowl, mix remaining ingredients. Add to fruit and stir gently. Let stand 15 min. Prepare bottom pie crust. Fill with fruit mixture. Add top crust, seal edges, and make slits in top for air vents. Bake at 400 degrees for 20 min. then reduce heat to 350 degrees and bake for 30 min. more.

Blueberry Lemon Cream Napoleons

10 sheets frozen phyllo dough, thawed

4 Tbl. melted butter

½ C. sugar

4 C. thawed frozen whipped topping

1 C. lemon curd (found in store jelly section)

2½ C. blueberries

Confectioners' sugar

Unfold dough. Remove 1 sheet and brush with melted butter and 2 tsp. sugar. Repeat with 4 more sheets, stacking each on top of previous sheet. Cut stack into 20 (3") squares. Repeat with remaining sheets. Place squares on baking sheet 1 inch apart. Bake in preheated 350 degree oven for 8 min. Cool on wire rack.

Fold 3 C. whipped topping into lemon curd. Spread 2 Tbl. onto each of 20 phyllo squares. Top each with 2 Tbl. blueberries. Set aside.

Spread remaining whipped topping onto 10 squares. Place these squares on top of 10 blueberry-lemon squares. Then top with remaining blueberry-lemon squares. Top with remaining plain phyllo squares, sprinkle with confectioners sugar. Makes 10 servings.
